    Bean Soup with Kale & Sausage
Bought some kale today and decided to make some soup with the ever-changing cold weather. Here’s what went down:
1 tablespoon olive oil8 large garlic cloves minced1 medium yellow onion4 cups chopped raw kale4 cups low-sodium chicken broth2 (15 ounce) cans of beans6 plum tomatoes2 teaspoons of basil & oregano2 chopped up sausages1 cup chopped parsleySalt & Peppa 

    Bean Soup with Kale & Sausage

    Bought some kale today and decided to make some soup with the ever-changing cold weather. Here’s what went down:

    1 tablespoon olive oil
    8 large garlic cloves minced
    1 medium yellow onion
    4 cups chopped raw kale
    4 cups low-sodium chicken broth
    2 (15 ounce) cans of beans
    6 plum tomatoes
    2 teaspoons of basil & oregano
    2 chopped up sausages
    1 cup chopped parsley
    Salt & Peppa

    Baked Pineapple Chicken
Baked a whole chicken with juice from an orange, lime, lemon, and pineapples. Spiced it up, and then placed it in the oven with onions underneath, and more pineapples and bacon over top. 
Made it with broccoli and deep-fried mashed potato croquettes on the side. Oh yeah.

Felt a little adventurous and wanted to try a full meal with lots of fun spices. Here’s what happened:1 1/4 teaspoons ground cumin1/2 teaspoon ground ginger1/4 teaspoon ground cloves1/8 teaspoon ground cayenne pepper1/2 teaspoon ground cardamom1/4 teaspoon ground coriander1/4 teaspoon ground allspice1 tablespoon olive oil1 onion1 red, green, orange, yellow bell pepper2 zucchinis1/2 cup golden raisins1 teaspoon kosher saltgrated zest of orange 1/2 cups couscous

    Bacon Bacon Bake-On!
Meatloaf with the magic of oatmeal mixed with cheddar cheese and an egg, with bacon and sauce on top. Served with green beans, potatoes, bacon with a dash of balsamic vinegar! Had a little more fun and made jasmine rice with grated carrots, peanuts, ginger, and chives. :]

    Royal Curry Vegetables with Chicken Baked in Ras-El-Hanout
Tried out some new spices from The Spice Trader today, and really enjoyed cooking with their ras-el-hanout. Baked chicken at 350°F with garlic, ras-el-hanout, lemon peel, white wine, chicken broth, and olive oil. Later took the mixture I baked with and reduced it over the stove for a tasty sauce to go with the chicken. :)

    Snack night!
Made a fruit platter and baked brie melted onto cranberry and raisin artisan crisps. Fruit platter has some pear, kiwi, strawberries, pineapples, and dragonfruit. :)

    Creamy Udon Carbonara
Inspired by Guu Sakabar’s Udon Carbonara.
2½ lbs udon noodles
½ cup heavy cream
6 eggs
½ lb bacon, cut into ½-inch dices
dozen mushrooms
2 small onions
2 tsp extra virgin olive oil
½ cup freshly grated parmesan cheese
2 tbsp chopped Italian parsley
Salt and freshly ground black pepper, to taste
Chopped seaweed
Optional raw egg on top
